This is one of my favorite bread recipes (credit goes go my old roommate, Katie, for the fabulous recipe). It is so easy and absolutely delicious! It works great as muffins also, and I just used it for the first time in the
Pampered Chef Mini-loaf Stoneware, and they made great small loaves of bread to give out to people. It made about 8 mini-loaves of bread and I liked this better than making a regular-sized loaf of bread, because it is hard to get the middle cooked without burning the outside on this recipe. Ok, for the recipe:
Pumpkin Bread
1 1/3 C. vegetable oil
5 eggs
16 oz. can pumpkin
2 C. flour
2 C. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 (3 oz) packages vanilla pudding mix (regular or instant)
12 oz. Chocolate chips
Directions:
Mix together first three ingredients. Then mix all dry ingredients together and combine with first 3 ingredients. Stir in pudding mix and chocolate chips. Pour into bread pan (spray pan beforehand so bread will come out easily). Cook at 350 degrees for an hour.
