Chocolate Chip Banana Muffins

For anyone who went to Amy's baby shower for the twins two years ago, this is the recipe for the fabulous chocolate chip banana muffins that Johnna made that day.

Chocolate Chip Banana Muffins
1/2 C. butter, softened
1 C. sugar
1 egg
1 TBS. hot water
1 tsp. baking soda
2 C. flour
1 1/2 tsp. baking powder
1 tsp. vanilla
4 ripe bananas, mashed
Optional: chocolate chips, powdered sugar

Directions:
Cream together butter and sugar.  Add egg and vanilla.  Dissolve hot water and baking soda, then add to mixture.  Add flour and baking powder.  Mix briefly, then add bananas.  Spoon into muffin trays and sprinkle with chocolate chips.  Bake at 350 degrees for 17-25 min.  Sprinkle with powdered sugar after the muffins have cooled.

Chocolate Chip Pumpkin Bread

This is one of my favorite bread recipes (credit goes go my old roommate, Katie, for the fabulous recipe). It is so easy and absolutely delicious! It works great as muffins also, and I just used it for the first time in the Pampered Chef Mini-loaf Stoneware, and they made great small loaves of bread to give out to people. It made about 8 mini-loaves of bread and I liked this better than making a regular-sized loaf of bread, because it is hard to get the middle cooked without burning the outside on this recipe. Here’s a little plug for my friend Lynette, a new pampered chef consultant – their products are amazing and I’m having a catalog party (which means I am just giving out catalogs for people to look at and submitting their orders together, since all my friends are too dispersed to actually have a real party), so if you want to order something from the Pampered Chef, let me know and I’ll send you a catalog. If you just want to check out their website, go here.

Ok, for the recipe:

Pumpkin Bread

1 1/3 C. vegetable oil
5 eggs
16 oz. can pumpkin
2 C. flour
2 C. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 (3 oz) packages vanilla pudding mix (regular or instant)
12 oz. Chocolate chips

Directions:

Mix together first three ingredients. Then mix all dry ingredients together and combine with first 3 ingredients. Stir in pudding mix and chocolate chips. Pour into bread pan (spray pan beforehand so bread will come out easily). Cook at 350 degrees for an hour.
